O by Brush, Brush Sushi’s new restaurant-within-a-restaurant concept offering a chef-driven sushi omakase experience, is now open. From James Beard semifinalist Chef Jason Liang, the restaurant offers an ever-evolving omakase journey where Edomae tradition merges with Chef Jason's Taiwanese-American heritage.

Joining Buckhead Village’s global culinary lineup, the new concept is artful, expressive, intentional, and innovative. A highlight of O by Brush is the culinary team’s use of dry-aged fish, where select varieties are carefully cleaned and aged in a specialized refrigerator for several days. This process enhances the flavor and improves the texture, elevating the sushi experience.

Within the main restaurant, O by Brush offers an exclusive dining enclave adorned with a meticulously crafted menu from Chef Liang. Priced at $255 per person, the expansive 20-course tasting menu showcases an exceptional variety of flavors and textures. Offering an exclusive extension of Brush Sushi’s menu direction, O by Brush offers two nightly seatings that each accommodate space for up to seven total guests.

To enhance their dining experience with curated beverage pairings – all crafted to complement the seasonal omakase menu – guests can choose to add on either the wine and sake package for an additional $125 or the premium pairing for $295. Each evening’s beverage pairing selection is expertly chosen by the staff sommelier to ensure that every sip serves as the perfect accompaniment to the flavors and textures of the revolving menu.
