Sankranti Indian Kitchen Looks Ahead After Breakout Summer

This summer marked a milestone for Sankranti Indian Kitchen. After serving thousands of guests at Atlanta's FIFA Fan Festival™, the locally founded Indian fast-casual restaurant is preparing for its next chapter with plans to open two new metro Atlanta locations.
For founder Srinivasa "Nimms" Nimmagadda, the successful run at one of the city's biggest events was about more than introducing guests to fresh, customizable Indian food. It was the result of six years spent refining nearly every part of the business, from recipes and kitchen workflows to technology and the guest experience.
Instead of chasing rapid expansion, Sankranti chose a different path. The company opened restaurants, made adjustments, tested new ideas, and sometimes made difficult decisions, all with the goal of building a concept that could succeed for the long term.
"Standing at the FIFA Fan Festival™ and serving guests from around the world, we could see how much those years of work had paid off," Nimmagadda said. "It wasn't just a successful event. It was validation that we've built a stronger restaurant and a stronger brand."
The journey included restaurants in Dunwoody, Emory Village and Georgia Tech. Each location helped the team better understand guest preferences, menu development, restaurant operations and the systems needed to build a scalable fast-casual concept. Those experiences shaped the refined model Sankranti operates today, one the company believes is among the strongest and most thoughtfully developed in the Indian fast-casual category.
"Every location taught us something," Nimmagadda said. "We simplified the menu, improved our operations and became more focused on what matters most, serving fresh, flavorful Indian food quickly and consistently."
Today, Sankranti is preparing to build on that momentum. Two new Atlanta locations are slated to be announced in the coming months, marking the beginning of the brand's next phase of growth. Built on six years of refinement, the company's operating model has positioned Sankranti to emerge as one of the leading concepts in the Indian fast-casual space.
"Our mission hasn't changed," Nimmagadda said. "We want to make fresh, healthy and affordable Indian food more accessible. The difference today is that we know exactly who we are and where we're headed."
